Unique Cavalry Units

Can anyone provide an overview of the various cavalry special units in the game and how they differ from each other?
Appreciate it.
Bulgarians – Konnik – Knight that turns into longsword after it dies
Burgundians – Coustillier – Knight with very strong first attack
Byzantines – Cataphract – Knight with anti-infantry bonus
Huns – Tarkan – Knight good against ranged unit and buildings
Lithuanians – Leitis – Knight with high attack that ignores armor
– Winged Hussar – stronger version of hussar
Magyars – Magyar Huszar – Hussar with anti-siege bonus (an no anti monk bonus)
Persians – War Elephant – THICC Knight
Poles – Winged Hussar – stronger version of hussar
Saracen – Mameluke – Camel with short ranged melee attack
Slavs – Boyar – Knight with lots of armor (basically a Teutonic knight on horse)
Tatars – Keshik – Knight but cheaper
