The quickest way to beat 50 spearman with a knight is to use the knight’s superior speed and agility to outmaneuver the slower spearman and strike them with the knight’s sword.

Go against the ai as sicilians, it will spam 50 spears if they see a stable and your knights fair better against spears then usual
Play with a friend?
Infinite res rm extreme, Sicilians vs Bohemians.
Play an online game against a Low Elo Legend, and do a scouts into knights build order.
In feudal age, run 6 scouts through their base which will cause them to ring the town bell and make 50 spearmen.
Get to castle age before them and pump out knights from two stables, taking Hera’s advice that knights counter pikes in early castle so they definitely counter spears.

More seriously, if you do scout rush into knights against an AI, there’s a good chance they’ll make spears, not 50 perhaps but you can build up your count over several games.
Bonus if you can use the scouts to keep them off gold so they have few options except spears to try and defend.!<
