Keep enough troops to pose a threat and force the tower reaction, but then I’d just go for a nice castle time and boom like a maniac. You should have an eco lead and be able to get to imperial before him.

Defensive towers is a horrible strat and bc how you are telling us how this is happening it sounds like he is better .
If he is towering his base it means he’s using a lot of stone and a lot of villagers picking up stone. That means he won’t attack you (not enough resources) and he might not even be able to castle.
You can boom mostly with ease and then raid him with enough Calvary or wait until you have enough siege to end the game

Same thing against stone walls. You focus on your eco, go up to castle and you’re way ahead. When you have a great eco and are ready to push, drop a castle next to his base, make trebs and raid him to death.
The advice that everyone has already given is 100% the most effective response. But if you really must beat him in feudal for the sense of pride and accomplishment or something, you can go Teutons and tower war with him. Your towers can garrison 10 vills so you’ll always win thee tower shootout, just make sure you go forward with enough.
Literally just ignore him, protect your own eco and play the long game. Vast majority of civs will out-boom Koreans especially if he’s investing stone into towers.
Vast majority of the time when I win its because my opponent got sucked into my stupid strategies/irritating efforts, and when I lose its because my opponent just does the basics while I try silly Korean things and just get run over eventually. (I’m a menace on gold rush & pit)
P.S Knights and Hussar are really scary no matters how many pikes you have.
Do what you do usually with an aggression that hopefully yields to a lot of stone waste into towers, then boom peacefully (while maintaining a threatening about of raiding units ) as you have stone for town centers and he does not.
Out boom him.
I would suggest sending all your villagers to attack.
I wouldn’t even force it in castle since they get the tower free upgrade and that counters mangonels really bad, boom and go imp.
few scouts or archers to bluff and provoke the towers, fc, forward castle, fast imp, trebs.
If he will always build defensive towers as Koreans just do not attack then. To get all the stone he will sacrifice other parts of eco. Go fast castle and build forward siege workshop and push with rams. Follow up with castle drop
1: Ignore them and just concentrate on your own economy
2: Ooooor pick Cumans and use early rams to annoy him.
