The idea is Villagers know how to properly kill and butcher meat without puncturing the intestines, bladder, or other body part that would result in the meat being ruined.
The extent of what I know about hunting and butchering is in this comment.
I know just enough to understand the “lore” reason behind the mechanic, but not enough to explain it in detail.
We’d obviously wait to eat sheep until we at least had onagers to speed up the amount of time it takes to kill.
Why stab 9 sheep individually when you can dump rocks on the whole flock at once
