What is the Optimal Civilization to Familiarize Oneself With the Game?

Well first I’d say play the Art of War if you hadn’t and have fun with campaigns.
Get the hang of game mechanics and unit counters, that sort of thing.
After that jump at AI with Byzantines (they are the jack of all trade civ with focus on cheaper counter) or maybe try Britons, Ethiopians, Vietnamese to try archers instead of cavalry.
Honestly most civs are fine since differences aren’t drastic with few exceptions like Chinese (6 villager start) or Meso civs (no cavalry).
When you want to get serious then find a basic build orders like scout rush or archer rush.
Your civ really isn’t a big deal as being able to do a smooth dark age and a proper early attack.
Learn to attack early and you’ll find AI being less of a challange.

Their build order is easy and they have a very forgiving scout rush to execute, they are forgiving on stone as castles cost less so you can boom and go forward, and they have a good win con that requires almost no micro.
I recommend them for learning scout rush and playing cavalry in general.
Byzantines are nice as you get stronger buildings which helps you hold ground.
They also have an easier time getting trash and camels out so if you end up under pressure you have some wiggle room to adapt.
The problem with them though is that closing out games can be hard, you have a long awkward end game trying to get the cataphracts going and you lack a bunch of good siege options.
Honorable mention is Khmer, as they also reward defensive play but have a better late game than Byzantines and they have a lot of noob bonuses too.
This civ teaches you how to play defensively.
Britons are the easiest archer civ (arguably Ethiopians, but Britons have more noob-friendly bonuses imo).
They have an easy start and are like the franks but with archers.
Archers take more micro but they scale hard and are very powerful if you can master them.
This civ teaches you how to snowball an archer lead into a dominant position on the map.
Mongols are my first main and I recommend them as well if you want to learn the true meaning of aggression.
Their hunt bonus gives them access to literally any opening play you want in dark and feudal age.
You can drush fast castle, drush into archers, scout rush as early as pop 17 (19 is better, 22 is noob friendly), tower rush, etc.
They also have a killer late game, with hussar + mangudai and some drill siege rams or siege onagers closing out games is simply beautiful.
Their mid game is very tricky though, usually you will be either playing a handful of steppe lancers (offensive play if you are winning) or a handful of camels (defensive play to stall so you can get hussar / mangudai out).
This civ teaches you how to rush.
Goths is my last suggestion and it comes with a disclaimer.
I wouldn’t recommend learning goths for 1v1 as your early game is very difficult compared to other civs and just for picking goths you are asking to be rushed.
If you are playing team games though goths can help you stick to an end game plan.
Goths have one option in late game and one option only, infantry spam.
This takes all the guesswork out of what to do in imperial age as you simply win if you spam infantry, so you don’t have to weigh many options which can be the bane of newer players when it comes to late game.
This civ teaches you how to shoot for a long term goal.
