For infantry:

Malians +1 pierce on infantry can be hard to deal with. Goths cheaper infantry & +1 atk vs buildings can tear down houses really fast & even TC’s if you get a decent mass. Special mention to Vikings, Japanese & Burmese, all with bonuses that can be quite powerful.

Archers:

Ethiopians have the best archers & Mayans have a nice discoun. Vietnamese extra hp can also be nice. Koreans free armor & wood cost reduction is pretty good.

Scouts:

Basically any civ that gets bloodlines is good. Magyars get a discount & free attack upgrade, which is a cut above the rest. Faster production from Huns & cheaper stables with cumans are also good picks.

Trash:

Byzantines & Lithuanians can be crazy with their spears & skirms. Not much raze potential however.

Unique bonuses:

Cumans clearly on top with rams & a second TC. Gurjaras with camel scouts can force your opponent to make spears instead of making more scouts. Add in archers with camel scouts & nothing in feudal can stop it.
