I have participated in some ranked matches and noticed a rating of 1200 that appears after the game, but there is no ELO score alongside it.
Is there a website I can use that will show me my rating and the games I’m playing on Xbox?
1200 is probably your elo.
There are also a lot of websites out there

The number you’re referring to is your elo.
If you use a controller and only play against others using a controller, then I think you’ll only show up on the controller-only leaderboards; which I believe only the official site supports at the moment.
Also, you’ll need to have played at least 10 games to appear on the leaderboards.
You’ll need to change the filter from keyboard/mouse to controller.
Your rating is your elo.
Press x on the main menu to view leaderboards.
You can do it on ranked before queuing up as well
If it says 1200, then it’s 1200.
What else do you need?

Your first 10 ranked games are «placement games».
If you hover your cursor over your profile icon in-game, it will show your current rating (or ELO, if you will), but to show up on sites like aoe2.net where you can search your name and find your ranking, I think you’ll actually need 10 games or more, as that is when your placement games have ended, and you’re close to or at what is your realistic, ranked skill level.
